¿Hay en este mundo un placer superior qué el de comer un brownie de chocolate?
La respuesta parece sencilla, pero os aseguro que no podéis responder hasta que probéis este alucinante postre. Yo personalmente creo que, después de probar este manjar, puedo afirmar que sí, y es el de comer una mezcla entre brownie de chocolate y tarta de queso con un ligero aroma de naranja es algo que difícilmente se puede olvidar.
¿Se le puede pedir algo más?
Sí, que sea sin gluten y nadie consiga distinguirlo. Eso que parece ciencia ficción, no lo es, y será una tarta que podréis llevar a cualquier sitio y quedar como un rey. Personalmente no hay sitio donde después de probarla no me hayan pedido la receta y con las manos en la boca exclamen ¡Jamás habría dicho que no lleva gluten!
La denominación de bromix viene por ser un mix de brownie y tarta de queso. Una fusión casi perfecta de esas dos espectaculares tartas, dejando en el paladar la cremosidad de la tarta de queso y el crujiente del brownie con pepitas de chocolate y nueces. Estoy seguro que hará derretir al hielo más perpetuo.
Ingredientes para el brownie:
100 gr de chocolate de cobertura.
100gr de mantequilla
75 gr. de harina de repostería SCHAR
1cucharadita de levadura química sin gluten
3 huevos
100 gr de pepitas de chocolate o 100 gr de chocolate de cobertura a trocitos.
100 gr de azúcar moreno o de panela
50 de nueces a trocitos
Pizca de sal
Media cucharadita de esencia de vainilla.
Ralladura de la piel de una naranja o media cucharadita de esencia de naranja
Para la crema de queso
200gr queso crema
2 yemas
50 gr azúcar blanco
Elaboración del bromix:
En un recipiente de cristal metemos 100gr de chocolate y 100 gr de mantequilla a trozos. Lo ponemos sobre un cazo con agua al fuego y dejamos que se funda al baño maría removiendo de vez en cuando.
Se deja enfriar un poco, se le añaden los huevos, la vainilla y el azúcar. Se remueve hasta que queda una mezcla homogénea. Añadimos la harina, la levadura tamizadas y una pizca de sal. Lo mezclamos todo hasta que quede no queden grumos. Finalmente, se le añade la ralladura de la naranja o la esencia, los trocitos o pepitas de chocolate y las nueces troceadas.
Vertemos la mezcla sobre un molde desmontable de 20 cm previamente cubierto en su base con papel de horno. Se reserva.
Antes de comenzar a hacer la crema de queso encendemos el horno a 180C.
En un bol vertemos las dos yemas de huevo, el azúcar y el queso. Se mezcla todo hasta que queda una crema suave y se vierte al molde del brownie con una cuchara, repartiéndolo uniformemente por toda su superficie.
Una vez todo en nuestro molde y con la ayuda de dos cuchillos, mezclamos un poco el brownie con el queso para que quede con esos peculiares ríos blancos y negros que la hacen vistosa a la vez que suculenta.
Lo metemos todo en el horno ya caliente durante una media hora. Si los bordes no se han despegado aun, déjalo cinco minutos más. Tiene que quedar más o menos este resultado.
Pocas cosas es este mundo se le pueden comparar. A disfrutar.
